Ingredients
  

  • ½ cup natural peanut butter
  • cup raw honey
  • 3 Tbsp unsweetened applesauce
  • 1 tsp vanilla extract
  • ¼ cup unsweetened coconut flakes
  • ¼ cup ground flaxseed meal
  • cups oats quick or old-fashioned
  • ½ cup organic rice puffs
  • 2 ½ Tbsp dark chocolate morsels
  • ½ tsp Ceylon cinnamon
  • Pinch of real salt

Method
 

  1. In a large bowl, stir together the peanut butter, honey, applesauce, and vanilla until smooth.
  2. Add the oats, coconut, flaxseed, puffed brown rice, cinnamon, and salt. Stir until fully combined.
  3. Fold in the dark chocolate chips.
  4. Chill the mixture for 15–20 minutes to firm slightly.
  5. Scoop and roll into 24 bite-sized balls.
  6. Store in an airtight container in the refrigerator.
