Method
- In a large bowl, stir together the peanut butter, honey, applesauce, and vanilla until smooth.
- Add the oats, coconut, flaxseed, puffed brown rice, cinnamon, and salt. Stir until fully combined.
- Fold in the dark chocolate chips.
- Chill the mixture for 15–20 minutes to firm slightly.
- Scoop and roll into 24 bite-sized balls.
- Store in an airtight container in the refrigerator.
