Avocado Toast With Egg

This easy avocado toast with egg is quick and filling. It’s full of healthy fat, protein, and flavor, making it the perfect for busy mornings or lazy weekends. Ready in 5 minutes, this is a meal you’ll want to make on repeat!

Equipment

  • 2 small bowls
  • 1 fork

Ingredients
  

  • 1 slice of bread use sourdough, multigrain, or whatever you have. I love the Sara Lee Artesano Multigrain Bread.
  • ½ ripe avocado
  • 1 large egg fried, scrambled, poached—you do you boo
  • Course salt cracked black pepper, and onion powder

Instructions
 

  • Toast the bread
  • Toast until it's golden and makes that nice crunch sound when you bite into it.
  • Make the avocado
  • In a small bowl, smash the avocado with a fork.
  • Season to taste with the black pepper, onion powder, and salt. Some of y'all may doubt me with the onion powder, but try it first!
  • Cook your egg
  • My lazy hack is to crack an egg into a microwaveable bowl (no plastic), whisk it around a few times, then pop it (covered) into the microwave for 45 to 50 seconds. For me, this comes out perfect every time, no oils or butter required.
  • Put it all together

  • Spread the avocado mixture on your toast
  • Stack the cooked egg on top of the avocado.
  • Sprinkle everything seasoning blend on top.
  • Enjoy!
