My Easy Healthy Recipe for Avocado Toast with Egg

I’ve officially joined the avocado toast club (yeah, I know, I’m one of those late to the party type of people). But, this recipe is so good that I just can’t stop making it. Not only is it quick, but it keeps me full for hours while giving me plenty of energy and focus to get things done.

If you’re like me and have to juggle 30 things before noon, this is a breakfast you’ll actually want to make.


Why This Toast is Everything

This is one of those easy healthy recipes that checks every box:

  • ✅ It’s quick (done in under 10 minutes)

  • ✅ Fills you up with healthy fat and protein

  • ✅ Very little cleanup (nobody has time for all those dishes)

  • ✅ Feels fit and fancy with very little effort (perfect for those of us who want healthy but convenient)


What You’ll Need

   Tools:

  • 1 or 2 small bowls
  • A fork

   Ingredients:

  • 1 slice of bread (go for sourdough, multigrain, or whatever you’ve got) I love the Sara Lee Artesano Multigrain Bread.

  • ½ avocado

  • 1 egg (fried, scrambled, poached—you do you)

  • Course salt, cracked black pepper, and onion powder

  • Everything seasoning (optional, but for me it’s a MUST. I use the Good & Gather brand from Target.

How to Make It

🔥 Step-by-Step Directions:

  1. Toast the bread

    • Toast until it’s really golden and makes a nice crunch when you bite it.

  2. Make the avocado

    • In a small bowl, smash the avocado with a fork.

    • Season to taste with the black pepper, onion powder, and salt. Some of y’all might be doubting me with the onion powder, but just try it!

  3. Cook your egg

    • My lazy hack is to crack an egg into a microwaveable bowl (no plastic), whisk it around a few times, then pop it (covered) into the microwave for 45 to 50 seconds. For me, this comes out perfect every time, no oils or butters required.

  4. Put it all together

    • Spread the avocado mixture on your toast

    • Stack the cooked egg on top of the avocado.

    • Sprinkle everything seasoning blend on top.

    • Enjoy!
