The best Jiffy cornbread recipe doesn’t need to be fancy — just a box, a few simple add-ins, and you’ve got something that tastes like you put your foot in it.

I didn’t grow up baking cornbread from scratch, but once I started experimenting with a few easy add-ins, I found a version that tastes homemade and comes together in no time.

Soft, buttery, and sweet; the type of cornbread that doesn’t need anything extra (of course, a little butter or honey doesn’t hurt).

You can find tons of Jiffy recipes on the web, but this version here is what I call the best Jiffy cornbread recipe.

  • Sweet, but not too sweet: Adjust it to your taste.

  • Easy: Two bowls, one pan, and no fancy equipment needed.

What You’ll Need

Tools:

  • 8×8 or 9×9 baking pan (I used glass)

  • Medium mixing bowl

  • Small bowl (for melting butter)

Ingredients:

  • 1 box plain Jiffy Cornbread Mix

  • 1/4 cup milk
  • 5 tablespoons salted butter, melted

  • 3 tablespoons granulated white sugar

  • 1 large egg (beaten)

  • 1/3 cup plain whole milk Greek yogurt

  • 1 teaspoon vanilla extract

How to Make the Best Jiffy Cornbread Recipe

  1. Preheat your oven to 375°F. Grease your 8×8 pan or line it with parchment paper for easy cleanup.

  2. Melt the butter in a small bowl. You want it mostly melted but not overly hot.

  3. Mix the ingredients: First, cream together the melted butter and sugar then stir in the egg. Next, stir in the Greek yogurt and vanilla extract. Finally, add the Jiffy mix to the wet ingredients and whisk until everything is combined.
  4. Pour the batter into your pan and smooth over the top.
  5. Bake for 25 to 30 minutes, or until the top is golden brown, or a toothpick poked into the center comes out clean. The middle of the cornbread should also gently spring back when pressed. Remember, oven cooking times and pan sizes can vary. Adjust cooking time as needed.

  6. Cool for a few minutes before slicing. Serve warm.

 

 

What to Pair it With and Optional Add-Ins

This cornbread goes great with gumbo!

You can also try adding:

  •  shredded cheddar cheese

  • Chopped jalapenos

  • honey

  • Cooked, crumbled bacon
